Console Vibio D.O.C. Rosso del Molise (red)

The Montepulciano grapes are carefully harvested late in the year. Great care is taken during the vinification process with meticulous attention paid to the temperature level during the 25 days fermentation of the must, carried out in wooden barrels at a temperature of 25° with a subsequent 10% drainage after 24 hours.
Aged in wood for 16 months and for a further 12 months in the bottle to produce a bright ruby red wine with subtle garnet highlights.
Dry and full bodied, displaying warmth and good tannic structure brimming with morello cherry leading to earthy tones.
Matured at length to produce a dry, warm, full bodied wine with good tannic structure.
Full, rounded and well balanced on the palate.
